Ingredients You Need for Spaghetti Pie [Vegan, Gluten-Free]

  • 17.63 ounces spaghetti (gluten-free if needed)
  • 7 ounces Baby Bella or White Button mushrooms
  • 1 bell pepper
  • Nutritional yeast, as desired
  • 1 can whole tomatoes
  • 4/5 cups plus 1 tablespoon vegetable broth
  • 1 onion
  • 1 clove garlic
  • 1 teaspoon sweetener of your choice
  • 4 tablespoons tomato paste
  • Salt and pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil

How to Prepare Spaghetti Pie [Vegan, Gluten-Free]

  1. Cook the spaghetti al dente according to package instructions. It will continue to cook in the oven, so you don't want it to be completely cooked through.
  2. Preheat the oven to 355°F.
  3. Cut the onion and garlic into cubes and add it to a large bowl.
  4. Add the tomatoes, the tomato, the oregano, and the vegetable broth and purée them in a blender. Taste the tomato sauce and add salt and pepper as needed.
  5. Brush a round cake pan with the olive oil, mix the pasta with the sauce in a bowl, and then place it in the pan.
  6. Sprinkle with nutritional yeast, garnish with peppers and sliced mushrooms, and bake for about 30-40 minutes in the oven. The longer the cake remains in the oven, the crispier the noodles get.
