Ingredients You Need for Raw Walnut Pate [Vegan]

For the Almond Feta Cheese:

  • 2/3 cup almonds, whole
  • 3 tablespoons lemon juice
  • 5 teaspoons olive oil
  • 2 cloves garlic
  • 1/2 teaspoon salt +1/8 teaspoon
  • 5 teaspoons water (use 1/4 cup if almonds are unsoaked)

For the Walnut Onion Paté:

  • 1/8 cup flaxseed / linseed meal
  • 1/4 cup water
  • 1 large brown onion
  • 3 tablespoons fresh parsley
  • 1 cup walnuts
  • 7 ounces Almond Feta Cheese
  • 1 1/2 tablespoon tamari or soy sauce*
  • 2 cups rolled oats
  • 1 teaspoon savory / nutritional yeast flakes

How to Prepare Raw Walnut Pate [Vegan]

For the Almond Feta Cheese:

  1. Soak almonds overnight. If using unsoaked almonds, increase the water to 1/4 cup.
  2. Blend all ingredients until smooth.

For the Walnut Onion Paté:

  1. Mix flax and water in a small bowl and allow to thicken.
  2. Process onion, parsley and walnuts until chunky.
  3. Add almond feta, tamari, oats and yeast and process until smooth.
  4. Put mix in the fridge for an hour or two to thicken up.
  5. Store in the fridge for up to 4 days, or freeze for 3-6 months.
