    Ingredients You Need for Raw Berry Ice Cream Sandwiches [Vegan]

    • 1/2 cup cashews
    • 1/4 cup walnuts
    • 1/3 cup softened dates (if not soft, soak in warm water for 15-30 mins beforehand and drain before using)
    • 1 teaspoon vanilla
    • 3 tablespoons raw cacao powder
    • 1 banana (chopped and frozen)
    • 1/2 cup frozen berries
    • 1 teaspoon vanilla
    • Plant milk of choice

    How to Prepare Raw Berry Ice Cream Sandwiches [Vegan]

    1. Start by adding the cashews, walnuts, dates, vanilla, and cacao to a blender or food processor and blend until a crumbly, doughy mixture forms (it doesn't need to be completely smooth, but should have all the ingredients evenly distributed).
    2. Line a pan with parchment paper and press the mixture into a layer around 1/4 inch thick. Place in the freezer for 20-30 minutes.
    3. After this time, remove from the freezer and cut to form 6-8 rectangle 'cookies'. Return to the freezer. In the meantime, place the banana, berries, and vanilla into a blender or food processor and blend, adding plant milk little by little if necessary, until a thick, soft serve consistency is reached.
    4. Remove your cookies from the freezer and spoon nice cream onto half of them.
    5. Gently press each of the remaining four cookies onto the four topped with nice cream to form the sandwiches, evening out the nice cream if necessary.
    6. Return to the freezer and allow to set for an additional 20 or so minutes before serving.
