Made with pumpkin purée, maple syrup, plenty of spices, and a bit of almond milk for moistness, these treats taste great plain, with a bit of powdered sugar, or with some spiced pumpkin glaze.

Pumpkin Protein Scones [Vegan]

For the Scones:

  • 1 cup flour
  • 1 tablespoon cold vegan butter
  • 1/4 cup vital wheat gluten
  • 1 scoop vegan protein (preferably vanilla flavored)
  • A pinch of ginger
  • A pinch of cloves
  • A pinch of nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup pumpkin purée
  • 1/4 cup almond milk
  • 3 tablespoons maple syrup

For the Spiced Pumpkin Glaze:

  • 2 tablespoons powdered sugar
  • A pinch of cinnamon
  • A pinch of cloves
  • A pinch of nutmeg
  • 1 teaspoon pumpkin purée
  • 1 tablespoons almond milk


  1. Preheat oven to 400°F.
  2. In a medium sized mixing bowl, combine the flour and vegan butter. Mix with hands until mixture looks like fine crumbs.
  3. Add in the dry ingredients and stir thoroughly.
  4. Pour in the almond milk and pumpkin purée and mix the ingredients into a dough.Knead the dough until everything is combined well.
  5. On a large flat surface, roll out the dough into a circular shape. Place a sheet of parchment paper and roll out the dough to about 1/2-inch with a rolling pin.
  6. Slice the dough into 6 equal pieces.
  7. Place the scone slices onto a baking sheet lined with parchment paper. Bake for 18-20 minutes.
  8. To prepare the spiced pumpkin glaze, combine all the ingredients and whisk together.
  9. Once the scones are baked, let them cool for about 10 minutes and drizzle with the glaze.
