Ingredients

  • 1 onion, diced
  • 2 large tomatoes, diced
  • 1 inch fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon sea salt
  • 1 cup water
  • 3 medium potatoes, chopped
  • 2 cups frozen green peas
  • 1/2 cup full-fat coconut milk

Preparation

  1. In a large pot on medium heat, saute the onion, garlic, and ginger for 4-5 minutes.
  2. Add in all the spices and mix to incorporate; about 3 minutes. Once fragrant, add in the tomatoes, water, and potatoes.
  3. Cover and cook about 15 minutes, until potatoes are tender, then mix in the peas and coconut milk.
  4. Cook for 3 more minutes, then remove from heat and serve warm.
