Ingredients

For the loaf:

  • 1 cup gluten-free all-purpose flour
  • 1/4 cup almond flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1/4 cup creamy almond or peanut butter
  • 1 flax egg (1 tablespoon flax seed meal + 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 1 cup diced apple such as honeycrisp

Candied Pecan Topping:

  • 1 cup roughly chopped, pecans
  • 1/4 cup coconut sugar
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 2 whole bay leaves

Preparation

  1. Preheat the oven to 350ºF. Line a loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the nut butter, flax egg, and vanilla extract. Stir in the rest of the dry ingredients until combined. Fold in the diced apple. Spread evenly into prepared loaf pan.
  3. In a small saucepan, over medium-low heat, add in all the pecan topping ingredients. Stir until combined. Cook for 5-6 min. until pecans are dark golden brown and caramelized with the sugar. Discard the bay leafs and distribute topping on bread batter.
  4. Bake for 40-45 min. until toothpick inserted comes out clean. Let cool for 10 minutes before slicing.
