Ingredients You Need for Paella with Cashews and Olives [Vegan]

  • 2 1/4 cup vegetable stock divided
  • 1/2 cup red onion diced
  • 2/3 cup arborio rice
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/4 teaspoon saffron
  • 3 cloves garlic
  • 1 green pepper diced
  • 1 red pepper diced
  • 2 tablespoons black olives pitted
  • 1/2 cup diced tomatoes or 1 large tomato diced
  • 1/2 cup cashews chopped
  • 1/2 cup frozen peas
  • 2 tablespoons cilantro chopped

How to Prepare Paella with Cashews and Olives [Vegan]

  1. Sauté the diced red onion in 1/4 cup of vegetable stock on medium-high heat.
  2. Reduce heat to medium. Stir in rice, garlic, turmeric, cumin, saffron, diced green peppers, diced red peppers, olives, and diced tomatoes. Cook for 1-2 minutes.
  3. Add 2 cups of vegetable stock and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes.
  5. Add frozen peas and chopped cashews. Stir until peas are heated.
  6. Season with salt and pepper to taste. Garnish with chopped cilantro or parsley.
