Ingredients

For the Muffins:

  • 1/2 cup coconut flour
  • 1/2 cup garbanzo bean flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 cup coconut oil
  • 1/4 cup almond milk
  • 1 banana
  • 1/2 cup brown sugar
  • 2 tablespoons orange juice
  • 2 cups parsnip, shredded

For the Glaze:

  • 1/2 cup powdered sugar
  • 2 teaspoons orange juice

Preparation

  1. In a bowl, mix flours, baking powder, cinnamon and ginger.
  2. In another bowl whip coconut oil, almond milk, banana , sugar and orange juice. Then add your dry ingredients and then the parsnip.
  3. Bake at 350°F in a sprayed and floured muffin pan for 35 minutes.
  4. Meanwhile, mix together the glaze. Once the muffins are cooled, drizzle it on.
