How to Prepare One-Pan Seasonal Vegetable Bisque [Vegan]
- Preheat the oven to 400F. Arrange the veggies in a baking sheet or oven-safe pan. Drizzle with olive oil, the dried parsley, thyme and ginger, as well as salt and pepper. Bake for 50 minutes until the vegetables are softened.
- Add roasted veggies to the blender, along with salted vegetable broth, white beans and lemon juice. Blend until smooth. Alternatively, combine the ingredients in a pot and use an immersion blender.
- Serve with your favorite toppings like herbs and croutons, and bread or crackers for dipping.
