    Ingredients You Need for One-Pan Seasonal Vegetable Bisque [Vegan]

    Ingredients:

    • 1 red onion (peeled and quartered)
    • 6 cloves garlic (peeled)
    • 4 large tomatoes (quartered)
    • 1 butternut squash (peeled, seeds removed, cubed)
    • 1 red bell pepper (seeds removed, chopped)
    • 2 celery sticks (chopped)
    • 2 carrots (chopped)
    • 1 tablespoon dried parsley
    • 1 teaspoon thyme
    • 1 teaspoon dried ginger
    • 2 tablespoons olive oil
    • 1 cup white beans, canned, drained and rinsed
    • 4 cups vegetable broth
    • 2-4 tablespoons lemon juice
    • Salt and black pepper to taste

    Equipment:

    • Deep baking sheet or oven-safe pan
    • Chopping board
    • Knife
    • Blender

    How to Prepare One-Pan Seasonal Vegetable Bisque [Vegan]

    1. Preheat the oven to 400F. Arrange the veggies in a baking sheet or oven-safe pan. Drizzle with olive oil, the dried parsley, thyme and ginger, as well as salt and pepper. Bake for 50 minutes until the vegetables are softened.
    2. Add roasted veggies to the blender, along with salted vegetable broth, white beans and lemon juice. Blend until smooth. Alternatively, combine the ingredients in a pot and use an immersion blender.
    3. Serve with your favorite toppings like herbs and croutons, and bread or crackers for dipping.
