This is a simple recipe for bite-sized biscuits that would be a wonderful accompaniment to soup, salad, or a glass of wine. Although they may be small, these biscuits pack in a ton of flavor thanks to the olives, walnuts, thyme, and a touch of chopped pickled red pepper.

Ingredients You Need for Olive-Walnut Biscuit Bites [Vegan]

  • 2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon coarse salt or less
  • 1/2 cup walnuts
  • 1 cup chopped green olives
  • 1/4 cup chopped pickled red pepper (optional, but gives nice red flakes)
  • 1 tablespoon chopped fresh thyme
  • 2/3 cup rice milk
  • 1/2 cup olive oil

How to Prepare Olive-Walnut Biscuit Bites [Vegan]

  1. Combine flour, nuts, olives, red pepper and thyme in a food processor and process to combine.
  2. Add the rice milk and olive oil and continue to process until a dough forms.
  3. Remove from processor and roll or stretch into a rectangle.
  4. Cut into small squares.
  5. Lay on foil-lined baking sheet and bake at 375°F for about 10 minutes, or until golden and cooked through.
  6. Pile into a serving dish or basket and sprinkle with additional thyme leaves. Serve warm or at room temperature.
