  • 1 cup of rolled oats (gluten-free)
  • 1 heaping tablespoon of ground flax seed
  • 1/2 cup of natural peanut butter
  • 2 Medjool dates, pitted (if the dates are dry, soak in water for twenty minutes to plump up)
  • A pinch of ground sea salt
  • 1 cup of vegan chocolate chips, melted

How to Prepare Peanut Butter Cup Energy Bites [Vegan]

  1. Grind the oats in a food processor until it resembles flour. Add the flax seed and process until blended. Add the peanut butter, dates, and sea salt and process until it forms a ball.
  2. Melt the chocolate chips until the chocolate is thin and pourable.
  3. Roll the dough into one inch balls and cover with the chocolate. Freeze for thirty minutes.
  4. Keep refrigerated in an airtight container for up to one week.
