How to Prepare Mushroom Pulled “Pork” [Vegan]
- With a fork, shred the stems of the mushrooms and place them in a bowl. Add all the spices and a tablespoon of oil and mix well. Place the mushrooms in a container suitable for the oven and bake the mushrooms at 360ºF for 30 minutes.
- Next, heat a pan with a little oil and sauté the baked mushrooms stirring occasionally for a few minutes. Add the barbecue sauce and stir well.
- Roast the sweet potatoes in the oven until they are soft. Slice them open to fill.
- Cut the onion and pepper in julienne and fry them together with the pine nuts.
- Fill the sweet potatoes with the vegetables, on top place several tablespoons of the mushroom "meat" and sour cream. Ready to serve!
