Mushroom Pulled "Pork" [Vegan]

Mushrooms are famous for their incredible meaty texture, perfect for veganizing recipes. This "pulled pork" or shredded meat using mushrooms is impressive! Fill a roasted sweet potato with onion and pine nuts and serve it with the delicious vegan tofu sour cream.

Ingredients You Need for Mushroom Pulled “Pork” [Vegan]

  • 3-4 large boletus mushrooms
  • 2 tablespoons vegetable oil
  • 3 tablespoons barbecue sauce
  • a pinch of salt
  • 1 teaspoon sweet paprika
  • 1 teaspoon of oregano
  • 1/2 teaspoon Cardamom powder
  • 1 teaspoon ginger powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon of salt
  • a pinch of black pepper
  • 2 sweet potatoes
  • 1 onion
  • 1 red pepper
  • 1 tablespoon pine nuts
  • Vegan sour cream

How to Prepare Mushroom Pulled “Pork” [Vegan]

  1. With a fork, shred the stems of the mushrooms and place them in a bowl. Add all the spices and a tablespoon of oil and mix well. Place the mushrooms in a container suitable for the oven and bake the mushrooms at 360ºF for 30 minutes.
  2. Next, heat a pan with a little oil and sauté the baked mushrooms stirring occasionally for a few minutes. Add the barbecue sauce and stir well.
  3. Roast the sweet potatoes in the oven until they are soft. Slice them open to fill.
  4. Cut the onion and pepper in julienne and fry them together with the pine nuts.
  5. Fill the sweet potatoes with the vegetables, on top place several tablespoons of the mushroom "meat" and sour cream. Ready to serve!
