If you want to try some different cookies, you'll love this recipe. It is a very simple cookie, perfect to accompany a tea or coffee, but with a touch of extraordinary flavor provided by matcha tea.

Ingredients You Need for Matcha Cookies [Vegan]

  • 1 cup of wheat flour or spelt
  • 2 teaspoons matcha tea powder
  • 1/2 cup of brown sugar or whole sugar
  • Handful of chopped nuts
  • 1 teaspoon of baking powder
  • 1/4 cup of oil
  • 1/2 teaspoon of salt
  • 1/2 cup of oat milk (or however much the dough needs)

How to Prepare Matcha Cookies [Vegan]

  1. In a bowl, mix the flour with matcha powder tea, sugar, yeast, salt and chopped walnuts.
  2. Add the oil and a portion of the plant-based milk. Begin to mix adding little by little the milk and then knead until it forms a ball of elastic dough.
  3. Cover with a baking tray with parchment paper and preheat the oven to 350ºF. Take portions of dough (more or less equal in size) in your hands, form balls and flatten them giving shape of cookies.
  4. Place the cookies on the baking tray and bake them for 15 minutes.
