Ingredients You Need for Maple Bacon Doughnuts [Vegan]

For the Doughnuts:

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup coconut milk or almond milk
  • 1 teaspoon apple cider vinegar
  • 1/2 cup coconut sugar or brown sugar
  • 3 tablespoons coconut oil
  • 1 teaspoon pure vanilla extract

For the Bacon:

  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • 2 teaspoons liquid smoke
  • 3-4 pieces of faux bacon

For the Glaze:

  • 1 teaspoon pure maple extract, divided
  • 1 1/2 cups powdered sugar
  • 2 tablespoons maple syrup
  • Almond milk, as needed

How to Prepare Maple Bacon Doughnuts [Vegan]

To Make the Bacon:

  1. In a small pan over medium heat add the faux bacon strips, coconut oil, and maple syrup, and cook for 5-7 minutes, until crisp. Once slightly cooled chop into pieces.

To Make the Doughnuts:

  1. For the doughnuts preheat the oven to 350ºF and coat the shells of a doughnut pan with coconut oil.
  2. In a medium bowl, sift together flour, baking powder, cinnamon baking soda, and salt.
  3. In a mixing bowl, mix together the almond milk and vinegar, stirring until curdled.
  4. Add coconut sugar, vanilla, and maple extract. Stir in flour mixture until just combined.
  5. Spoon batter into the prepared doughnut pans.
  6. Bake doughnuts for 16-18 minutes, until golden brown and baked through. Place onto a cooling rack.

To Make the Glaze:

  1. Combine the maple extract and maple syrup, then add to the powdered sugar to combine. Whisk until smooth. Add vanilla and almond extract, stirring until combined.
  2. When doughnuts are mostly cool, dip the tops into the glaze to coat. Top with the prepared bacon while still wet.
  3. Let the batch set for 10-15 minutes. Doughnuts are best served right away or same day. If not serving doughnuts right away, wait to glaze until ready to enjoy.
