How to Prepare Maple Bacon Doughnuts [Vegan]
To Make the Bacon:
- In a small pan over medium heat add the faux bacon strips, coconut oil, and maple syrup, and cook for 5-7 minutes, until crisp. Once slightly cooled chop into pieces.
To Make the Doughnuts:
- For the doughnuts preheat the oven to 350ºF and coat the shells of a doughnut pan with coconut oil.
- In a medium bowl, sift together flour, baking powder, cinnamon baking soda, and salt.
- In a mixing bowl, mix together the almond milk and vinegar, stirring until curdled.
- Add coconut sugar, vanilla, and maple extract. Stir in flour mixture until just combined.
- Spoon batter into the prepared doughnut pans.
- Bake doughnuts for 16-18 minutes, until golden brown and baked through. Place onto a cooling rack.
To Make the Glaze:
- Combine the maple extract and maple syrup, then add to the powdered sugar to combine. Whisk until smooth. Add vanilla and almond extract, stirring until combined.
- When doughnuts are mostly cool, dip the tops into the glaze to coat. Top with the prepared bacon while still wet.
- Let the batch set for 10-15 minutes. Doughnuts are best served right away or same day. If not serving doughnuts right away, wait to glaze until ready to enjoy.
