Lemon and Thyme Mushroom Dirty Fries [Vegan, Gluten-Free]

Ingredients

  • 2 servings of fries
  •  3 3/4 cups Portobello mushrooms
  •  1/2 of 1 red or white onion
  • 2-4 garlic cloves
  • Generous 3/4 cup cashew cream
  • 3 1/4 tablespoons white wine
  • A handful of fresh thyme
  • 3/4 cup vegan cheese
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 lemon

Preparation

  1. Prepare the fries.
  2. Heat up some oil in a skillet on a medium heat. Add minced garlic and cook until fragrant.
  3. Slice the onion and mushrooms. Add to the garlic and season with the sea salt and pepper. Cook until mushrooms are slightly browned.
  4. Add cream, white wine, and thyme. Cook until thickened slightly.
  5. Spread fries in an oven safe skillet and place the mushrooms mix on top. Sprinkle with shredded vegan cheese and place under the grill for about 5 minutes. Keep and eye on it to make sure it doesn’t burn.
  6. Drizzle with fresh lemon juice and serve warm.
