How to Prepare Indian Rainbow Carrot Dip [Vegan]
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Arrange the carrots and garlic on the prepared sheet.
- In a medium bowl, whisk together the olive oil, lemon juice, coriander, cumin, paprika, salt, and red chili powder until well combined. Pour the contents of the bowl over the carrots and garlic and, using your hands, massage the liquid into the vegetables.
- Bake for 35 to 45 minutes, until carrots are tender and cooked through. Remove from the oven and set aside to cool completely.
- Transfer the contents of the baking sheet to a blender. Add the water and tahini and blend until smooth and creamy. Taste and adjust the seasoning as desired.
- Serve with grain-free crackers, grain-free tortillas, or raw veggies.
