    Ingredients You Need for Indian Rainbow Carrot Dip [Vegan]

    • 4–5 large carrots (use multiple colors to provide even more nutrition), peeled
    • 5–6 garlic cloves, peeled
    • 2 tablespoons extra-virgin olive oil
    • 1 tablespoon freshly squeezed lemon juice
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon salt, or to taste
    • 1/4 teaspoon red chili powder
    • 1/4 cup water
    • 2 tablespoons tahini
    • Grain-free crackers or tortillas or crudite vegetables (cherry tomatoes, celery, cauliflower or broccoli florets, or baby carrots), for serving

    How to Prepare Indian Rainbow Carrot Dip [Vegan]

    1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
    2. Arrange the carrots and garlic on the prepared sheet.
    3. In a medium bowl, whisk together the olive oil, lemon juice, coriander, cumin, paprika, salt, and red chili powder until well combined. Pour the contents of the bowl over the carrots and garlic and, using your hands, massage the liquid into the vegetables.
    4. Bake for 35 to 45 minutes, until carrots are tender and cooked through. Remove from the oven and set aside to cool completely.
    5. Transfer the contents of the baking sheet to a blender. Add the water and tahini and blend until smooth and creamy. Taste and adjust the seasoning as desired.
    6. Serve with grain-free crackers, grain-free tortillas, or raw veggies.
