  • 1 tablespoon plant-based protein powder, vanilla
  • 2 teaspoons coconut sugar
  • 1/8 teaspoon baking soda
  • pinch sea salt
  • 1 tablespoon cashew butter
  • 1/4 teaspoon vanilla extract
  • 1/2 tablespoon water
  • 1/2 tablespoon mini chocolate chips, dairy-free

How to Prepare High-Protein Single Serve Chocolate Chip Cookie [Vegan, Gluten-Free]

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a bowl, mix together all of the ingredients except for the chocolate chips. Taste and adjust sweetness level, if needed. Stir in chocolate chips.
  3. Roll dough into a ball in your hands, then flatten slightly and place in the center of prepared baking sheet. Bake for 5-8 minutes.
  4. Remove from oven and allow to cool for two minutes before devouring.
