It's no wonder falafel are popular. These little chickpea balls are plant-based by default and home to many different countries in the Middle East. Usually, however, they are deep-fried and dripping in oil, so this recipe provides a lighter take on the classic by using the oven.

How to Prepare Healthy Spinach Falafel [Vegan, Gluten-Free]
- Preheat the oven to 355°F and line a baking tray with parchment paper.
- Place all the falafel ingredients, except for the carrots, sesame seeds, and a 1/4 cup of oats, into a blender and combine them until you get a smooth mixture.
- Place the mixture in a bowl and add the remaining ingredients.
- Mix everything together with a spatula and start forming small shaped falafel balls. Add more oats if the dough is too sticky.
- Place the falafel on the tray and sprinkle some additional sesame seeds on top.
- Place the tray in the oven and bake it for 30-40 minutes, flipping the falafel halfway through the cook time.
- In the meantime, prepare your wrap.
- For the tahini, simply mix together all the sauce ingredients until you get the desired consistency.
Notes
If you want to make a wrap you should also grab: whole wheat wraps, red cabbage, tomatoes, arugula, carrots, and fresh cilantro.
