Healthy Spinach Falafel [Vegan, Gluten-Free]

It's no wonder falafel are popular. These little chickpea balls are plant-based by default and home to many different countries in the Middle East. Usually, however, they are deep-fried and dripping in oil, so this recipe provides a lighter take on the classic by using the oven.

Ingredients You Need for Healthy Spinach Falafel [Vegan, Gluten-Free]

For the Falafel:

  • 1 15-ounce can chickpeas, rinsed and drained
  • 1/3 cup fresh cilantro
  • 1/4 cup gluten-free rolled oats
  • 1 medium white onion, diced
  • 4 cloves of garlic
  • 1 tablespoon tahini
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cumin
  • A dash of sea salt and pepper
  • 2 tablespoons sesame seeds
  • 1 cup spinach
  • 1 cup carrots, shredded

For the Tahini

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water, as needed
  • A dash of black pepper

How to Prepare Healthy Spinach Falafel [Vegan, Gluten-Free]

  1. Preheat the oven to 355°F and line a baking tray with parchment paper.
  2. Place all the falafel ingredients, except for the carrots, sesame seeds, and a 1/4 cup of oats, into a blender and combine them until you get a smooth mixture.
  3. Place the mixture in a bowl and add the remaining ingredients.
  4. Mix everything together with a spatula and start forming small shaped falafel balls. Add more oats if the dough is too sticky.
  5. Place the falafel on the tray and sprinkle some additional sesame seeds on top.
  6. Place the tray in the oven and bake it for 30-40 minutes, flipping the falafel halfway through the cook time.
  7. In the meantime, prepare your wrap.
  8.  For the tahini, simply mix together all the sauce ingredients until you get the desired consistency.

Notes

If you want to make a wrap you should also grab: whole wheat wraps, red cabbage, tomatoes, arugula, carrots, and fresh cilantro.
