Ingredients

To Make the Polenta:

  • 1-pound, pre-cooked polenta
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt 
  • 1/2 teaspoon black pepper

To Make the Bruschetta:

  • 2 cups cherry or grape tomatoes, sliced
  • 2 tablespoons fresh basil, minced
  • 1 tablespoon olive oil
  • 1 Tablespoon balsamic vinegar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Preparation

  1. Remove polenta from the packaging and slice into eight rounds. Brush lightly with oil and sprinkle with salt and pepper.
  2. Pre-heat the grill to high heat.
  3. Place polenta slices on the grates and grill for 8 minutes per side.
  4. While polenta is grilling, make your tomato topping! Combine tomatoes, basil, olive oil, balsamic, sea salt, and pepper in a small bowl. Mix together and set aside to marinate.
  5. Remove polenta slices from the grill and spoon bruschetta topping over top. If desired, garnish with another dose of fresh basil.
