    Green Ice Blocks [Vegan]

    These ice blocks are perfect for when you're craving something sweet! Their beautiful green color comes from the delicous ingredients added and will make you feel like summer is here!

    Ingredients You Need for Green Ice Blocks [Vegan]

    • 1 young coconut, 12 fl oz coconut water
    • 1 ripe avocado
    • 1 small Lebanese cucumber, coarsely chopped
    • 1/2 small green apple, peeled and cored, coarsely chopped
    • 1 tablespoon mint leaves (optional)
    • 3 tablespoons coarsely chopped spinach (optional)
    • 1 tablespoon lime juice
    • 3–4 tablespoons maple syrup, to taste
    • a pinch of sea salt

    How to Prepare Green Ice Blocks [Vegan]

    1. Crack open the coconut, if using, and pour the juice into a blender. Using a spoon, scoop out the flesh from inside the coconut and add to the blender. Alternatively, add the coconut water to the blender.
    2. Add the remaining ingredients and blend until very smooth.
    3. Pour the mixture into ice block (popsicle/ice lolly) moulds, to about 1 cm (1/2 inch) from the top to allow the mixture to expand as it freezes.
    4. Place in the freezer for about 4 hours, until frozen.

    Notes

    You will always lose some sweetness on freezing, so keep this in mind when tasting your mixture before putting it in the freezer. If it tastes perfectly sweet, you may need to add a little more maple syrup than you think you need, to counteract this effect.
