Ful is a staple dish in many regions in the Middle East. Each country has its own take on this beloved vegan bean dip. In Palestine, we serveful with lots of fresh garlic, lemon juice and olive oil. You will find the olive oil dripping down your hands as you dip into ful. If you ask my dad, it is the only way to enjoy it. My favorite part of ful is the da’ah, which is a jalapeño salsa topping that truly takes this recipe to another level of deliciousness.

How to Prepare Ful (Fava Bean Dip) [Vegan]
- To a small pot, add the entire can of foul mudammas. Let this come to a simmer over medium heat for 2 to 4 minutes. Using a pestle or potato masher, mash these fava beans until they are no longer whole.
- To this, add the tahini, cumin and a dash of salt and pepper. Stir this together and cook for another 2 to 4 minutes. Place this mixture in a dish that has edges so you can easily dip into it.
- To prepare the topping, either pulse together the jalapeño, lemon juice, olive oil and garlic in a small food processor or mash them with a mortar and pestle. Both techniques will work fine. Season with a little salt as well.
- Top the ful with this salsa, which really elevates this dip to the Palestinian standard.
- You may also garnish with the diced tomatoes to brighten it up. You can drizzle more olive oil if you prefer! Enjoy with fresh pita bread.
