Ingredients You Need for Crunchy Caramel Slice [Vegan, Gluten-Free]

For the Base:

  • 1 cup rolled oats
  • 1/4 cup buckwheat groats
  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/3 cup cacao powder
  • 4 tablespoons date syrup
  • 3/4 cup coconut milk

For the Cashew Cream Layer:

  • 1 cup cashews, soaked for a minimum of 4 hours (or boiled for 10 minutes)
  • 1/8 cup maple syrup
  • 1 cup coconut milk

For the Caramel Crisp Layer:

  • 1 cup Medjool dates, pitted
  • 1/2 cup peanut butter (or other nut butter)
  • 1/2 cup coconut milk
  • 2 cups organic unsweetened corn flakes

For the Chocolate Layer:

  • 1 ripe avocado
  • 1/4 cup cacao powder
  • 1/4 cup maple/date syrup
  • 1/4 to 1/3 cup coconut milk (for a smoother and "milkier" result)

How to Prepare Crunchy Caramel Slice [Vegan, Gluten-Free]

  1. Place all base ingredients into a high-speed blender. Use the tamper tool to mash it down and blend until smooth (it's ok if there are a few whole pieces here and there).
  2. Line a brownie tin with parchment paper and place the base dough inside.
  3. Press down evenly with your fingers or a spoon. Wet your fingers with water if it's too sticky and place in the freezer.
  4. Add all cream layer ingredients into the blender and mix until smooth. Pour it over the chocolate base and place back into the freezer until firm.
  5. Once firm, prepare the caramel filling. Add the dates, nut butter, and coconut milk into the blender until smooth and pour into a bowl. Add the corn flakes and mix together until combined.
  6. Place the caramel crunch layer on top of the cream layer and spread evenly. Place back into the freezer and prepare the frosting.
  7. Simply place all ingredients into the blender until smooth. Place on top of the caramel and spread evenly with a spatula.
  8. Place back into the freezer until firm and then place into the refrigerator. Let it thaw a bit before cutting.
