For the Maple-Sriracha Sauce:
- Melt the butter in a small pot over medium heat. Add the honey, Sriracha, soy sauce and lime juice and stir until the mixture bubbles gently. Cook for 5 minutes until the sauce gets slightly thicker.
- Pour the warm sauce into a bowl and set aside while you prepare the breaded tofu.
For the Breaded Tofu:
- Cut the tofu into bite size chucks or slices.
- Place the corn flour and panko crumbs in two separate shallow dishes.
- In a third dish, combine the chickpea flour with the water; whisk until smooth.
- Dredge each tofu piece in the flour, ensuring it is evenly coated, then dip it into the chickpea mixture, and finally coat it with breadcrumbs, pressing gently to adhere the breadcrumbs to the tofu.
- You can cook the breaded tofu in an air fryer, if you have one.
- You can also coat the bottom of a large skillet with oil, heat over medium-high heat, and place the breaded tofu in the skillet. Cook for a few minutes on each side until golden brown.
