Another delicious go-to side that’s no-fuss. The easiest way to get crispy baked fries is to use a wire baking grate on top of your baking sheet if you’ve got one! It allows the air to circulate so there are no soggy sides. If you don’t have one, no worries. Just flip the fries halfway through.

Ingredients
- 2–3 medium-large sweet potatoes, cut into 1/4-inch (6-mm)-thick fries
- 2 tablespoons (30 ml) extra-virgin olive oil
- 1 teaspoon sea salt, divided
- Low-sugar ketchup
Preparation
- If you have the time, soak the cut sweet potatoes in a bowl of cold water for 30 minutes. This helps to remove the excess potato starch and make them even crispier.
- Preheat the oven to 425°F (220°C, or gas mark 7) and arrange a rack in the middle. Line a large baking sheet (or 2 medium baking sheets) with parchment paper. If you have one, place a wire rack ontop of the baking sheet.
- Pat the sweet potato fries dry with paper towels. Toss them in the oil until well-coated.
- Add the fries to the baking sheet(s) in a single layer and sprinkle 1/2 teaspoon of salt. Distribute them evenly so they can get crispy.
- If using the wire rack, bake for 30 to 40 minutes straight through. The timing depends on your oven, so watch them after the 30-minute mark. If you’re cooking directly on the baking sheet, flip the fries with a spatula halfway through.
- Once the fries are golden brown and crisp, remove from the oven and season with 1/2 teaspoon of salt. Optionally serve with your favorite sauce or a low-sugar ketchup or beet ketchup for AIP!
