Creamy Sweet Potato Marinara Sauce [Vegan]

Ingredients

  • 1 sweet potato, about 2 1/2 cups cubed
  • 1/2 medium onion, diced
  • 3 garlic cloves
  • 2 roma tomatos, diced
  • 4 oz silken tofu
  • 5 basil leaves
  • 3 sprigs of thyme
  • 1 teaspoon salt
  • 3/4 teaspoon pepper

Preparation

  1. Cook sweet potatoes until very tender.
  2. Sauté onion and garlic in a little oil. Add tomatoes.
  3. Put everything in a bowl and purée with an immersion blender. Use a food processor or regular blender if you don't have an immersion blender.
  4. Serve.
