Coconut Rice Balls With Chocolate Sauce [Vegan]
These coconut rice balls are sticky-sweet and delicious. Thai sticky rice is enveloped in coconut oil, sweetened with vanilla, rolled in desiccated coconut, and then drizzled with chocolate sauce. Such fun, and so easy to make!

How to Prepare Coconut Rice Balls With Chocolate Sauce [Vegan]
- Cook the Thai sticky rice in water for 15 minutes or as the package dictates.
- Put the rice into a medium-large size bowl and let it cool down for a bit until it's okay to handle with your hands. Melt some coconut oil (unless your kitchen is warm enough, then the coconut oil will be liquid anyway), pour it into the bowl, and then add 2 cups of desiccated coconut, vanilla extract, and powdered sugar. Mix together well until you get a sticky, dough-like substance. Start making coconut balls. Roll the balls in the remaining desiccated coconut so they are nicely covered.
- Serve with some melted chocolate drizzled over it.
