Cinnamon Apple French Toast [Vegan]

This is a flavorful, fluffy toast perfect for your next brunch! Vegan french toast just got a whole lot easier with this recipe!

Ingredients You Need for Cinnamon Apple French Toast [Vegan]

To Make the French Toast:

  • 2 tablespoons vegan butter or coconut oil
  • 1 15-ounce can coconut milk
  • 1 cup vanilla almond milk
  • 1/4 cup maple syrup (optional, but recommended)
  • 1 teaspoon vanilla
  • Pinch salt
  • 6-8 pieces of thickly cut sourdough bread

To Make the Cinnamon Apples:

  • 1 tablespoon coconut oil
  • 2 medium apples, cored and thinly sliced
  • 1 teaspoon cinnamon
  • Pinch salt
  • 2 tablespoons maple syrup

How to Prepare Cinnamon Apple French Toast [Vegan]

To Make the French Toast:

  1. In a blender, add the coconut milk, almond milk, maple syrup, vanilla, and salt.
  2. Blend well for about 15 seconds.
  3. Put the mixture in a 9x9-inch baking dish or wide mixing bowl.
  4. Place 1-2 thick slices of bread in the container and allow to soak for about 30 seconds.
  5. Meanwhile, begin to heat a wide non-stick skillet (or cast iron skillet) over medium heat and add the vegan butter.
  6. When the "butter" is melted, add 2 pieces of the soaked sourdough to the pan and cook for 3-5 minutes or until golden brown on the bottom. Flip the bread and cook until the other side is golden brown and a little crispy.
  7. Remove from the heat and serve immediately with the cinnamon apples, maple syrup, and a little more vegan butter.

To Make the Cinnamon Apples:

  1. In another medium sauté pan, heat a little coconut oil over medium heat and add the apples.
  2. Sauté for 5 minutes over medium heat, stirring occasionally, until tender.
  3. In the last minute of cooking, add the maple syrup, cinnamon, and salt.
  4. Serve on top of the french toast!
