Ingredients You Need for Chinese Orange Cauliflower [Vegan]

  • 1/2 medium head cauliflower
  • 1/2 cup organic unsulphured dried apricots
  • 1 cup orange juice
  • 2 tablespoons coconut aminos, liquid aminos, or soy sauce
  • 1 garlic clove
  • 1/3-inch piece fresh ginger
  • Juice of 1/2 lemon
  • 1/2 bunch green onions, sliced (for garnish)
  • 1/2 tablespoon sesame seeds (for garnish)

How to Prepare Chinese Orange Cauliflower [Vegan]

To Make the Cooked Version:

  1. Preheat oven to 350°F and line a large baking dish.
  2. Wash and dry cauliflower. Remove leaves and cut into 1-inch pieces.
  3. Place the cauliflower onto the baking dish and place into the oven for 20 minutes.
  4. While the cauliflower cooks, prepare the sauce. Place all of the ingredients into a high-speed blender and process until smooth.
  5. Remove the cauliflower from the oven and cool for 10 minutes. Place it into a large bowl (or keep it on your baking dish, your call), and pour over the sauce. Stir until all of the pieces are covered. Place back into the oven for 8 minutes.
  6. Remove from the oven and cool for 10 minutes.
  7. Sprinkle with green onions and sesame seeds before serving.

To Make the Raw Version:

  1. Wash and dry cauliflower. Remove leaves and cut into small pieces, not more than 1/2-inch.
  2. Prepare the sauce by blending all of the ingredients until smooth, then pour over the cauliflower. Allow it to marinate for about 2 hours. Place in into a dehydrator at 110°F for 2 hours, to allow it to soften a bit and warm through.
  3. Sprinkle with green onions and sesame seeds before serving.
