Ingredients You Need for Cheesy Rice Stuffed Jalapeños [Vegan]

  • 3 medium-sized potatoes, cubed
  • 2 long carrots, chopped
  •  3 tablespoons water or oil
  • 1/2 cup nutritional yeast
  • 1-2 teaspoons salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Juice of 1 lime
  • Cooked rice
  • 3 whole jalapeños, halved
  • 1 red bell pepper, sliced, for garnish

How to Prepare Cheesy Rice Stuffed Jalapeños [Vegan]

  1. Preheat oven to 400°F.
  2. Boil or steam 2 cups of peeled and chopped potatoes and 1 cup chopped carrots
  3. Once soft, put cooked vegetables in blender with 1/2 cup of water, then blend until smooth
  4. Add 1-2 teaspoons salt, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and juice from the lime.
  5. Add either 3 tablespoons of oil or water, then blend until smooth.
  6. Add 1/2 cup nutritional yeast flakes and blend. Add tiny amounts of water if it’s too thick to blend.
  7. Halve the jalapeños and brush them with oil and salt, if desired. Mix cheese sauce with cooked rice and stuff in a jalapeño.
  8. Top with sliced red bell pepper, if using.
  9. Bake at 400°F for 20 minutes.
