Ingredients You Need for Cheesy Rice Stuffed Jalapeños [Vegan]
How to Prepare Cheesy Rice Stuffed Jalapeños [Vegan]
- Preheat oven to 400°F.
- Boil or steam 2 cups of peeled and chopped potatoes and 1 cup chopped carrots
- Once soft, put cooked vegetables in blender with 1/2 cup of water, then blend until smooth
- Add 1-2 teaspoons salt, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and juice from the lime.
- Add either 3 tablespoons of oil or water, then blend until smooth.
- Add 1/2 cup nutritional yeast flakes and blend. Add tiny amounts of water if it’s too thick to blend.
- Halve the jalapeños and brush them with oil and salt, if desired. Mix cheese sauce with cooked rice and stuff in a jalapeño.
- Top with sliced red bell pepper, if using.
- Bake at 400°F for 20 minutes.
