I love having veggies for breakfast. Call me crazy, but I think with a little bit of cinnamon and nut butter just about anything can become a hearty and delicious breakfast! Squash has just a subtle enough flavor that it goes perfectly with just about any variety of spices or add-ins you can think of, which makes this a very versatile dish. Plus, if you have veggies for breakfast you can start off your day on the right foot!
Butternut Squash Breakfast Bowl [Vegan]
- 1 tbsp coconut oil
- 12 oz butternut squash, cubed (fresh or frozen)
- 1 tbsp peanut butter
- ¼ tsp cinnamon
- ¼ tsp all-spice
- 2 tsp maple syrup
- Warm the oil over medium heat and add in the butternut squash. Cook until either it begins to soften if using fresh, or until it's warmed through if using frozen, about 8 minutes.
- Add in the remaining ingredients and stir well. Let cook 2-3 minutes longer. Serve warm!
