These brownies are out of this world delicious. You can't go wrong with peanut butter and chocolate, but these brownies are especially rich, decadent, and luscious. Plus, they're gluten-free so anyone can indulge!

Ingredients You Need for Buckeye Brownies [Vegan, Gluten-Free]

For the Dough:

  • 4 tablespoons coconut sugar
  • 2 tablespoons maple syrup
  • 2 cups gluten-free flour
  • 1/4 cup coconut oil plus more for greasing the baking dish
  • 1 tablespoon aluminium free baking powder
  • 3/4 cup raw cacoa powder
  • 1 tablespoon organic vanilla
  • 1/3 cup vegan dark chocolate, chopped
  • 1 3/4 cup almond or oat milk

For the Filling and Icing:

  • 1 1/2 cups peanut butter (no added sugar)
  • 5 ounces dark vegan chocolate
  • 1/4 cup coconut oil, melted
  • 2 teaspoons organic vanilla
  • 1/3 cup raw cacao powder
  • 2 tablespoons maple syrup
  • 2 tablespoons oat or almond milk

How to Prepare Buckeye Brownies [Vegan, Gluten-Free]

To Make the Brownies:

  1. Preheat oven to 390°F.
  2. Combine all ingredients in a large bowl and mix well.
  3. Grease a baking dish (approximately 10x7 inches) with the extra coconut oil. Transfer the dough to the baking dish and spread it evenly.
  4. Bake for about 25 minutes and then let cool a bit.

To Make the Filling and Icing:

  1. Start by smearing the peanut butter evenly over the chocolate brownie. If it's still a bit warm, it helps make the butter softer.
  2. Melt the dark chocolate in a small saucepan at low heat. When it's melted, mix in the remaining ingredients and – again – make an even layer on top of the nut butter.
  3. Store in the fridge to cool and let the chocolate top harden. Then enjoy!
