    These broccoli meatballs are a wonderful way to get in an extra serving of veggies!

    Ingredients You Need for Broccoli Meatballs [Vegan]

    • 1 1/2 cups (400g) broccoli
    • 1 1/4 cups (370g) potato
    • 2 tablespoons garlic powder
    • 2 tablespoons onion powder
    • 1/2 cup (100g) oats, ground
    • 3 tablespoons nutritional yeast
    • 1 tablespoon olive oil
    • zest half a lemon
    • fennel or fresh oregano
    • salt and pepper

    How to Prepare Broccoli Meatballs [Vegan]

    1. Boil the broccoli and the potato in steam, strain them and mash them in the blender.
    2. Transfer the ground potato and the ground broccoli to a bowl and mix well. Add all the remaining ingredients and mix well until combined.
    3. Place dough in the fridge to set for 2 hours.
    4. Then, shape meatballs, place them in a pan lined with parchment paper and bake in preheated oven at 200°C for about 30 minutes.
    5. When they're golden brown on the bottom, carefully turn them upside down. Then, flip over bake them for a few minutes until toasted. Take them out of the oven and let them stand and cool.

    Notes

    They go great with toast or rice with a little vegan mayonnaise!
