How to Prepare Broccoli Meatballs [Vegan]
- Boil the broccoli and the potato in steam, strain them and mash them in the blender.
- Transfer the ground potato and the ground broccoli to a bowl and mix well. Add all the remaining ingredients and mix well until combined.
- Place dough in the fridge to set for 2 hours.
- Then, shape meatballs, place them in a pan lined with parchment paper and bake in preheated oven at 200°C for about 30 minutes.
- When they're golden brown on the bottom, carefully turn them upside down. Then, flip over bake them for a few minutes until toasted. Take them out of the oven and let them stand and cool.
Notes
They go great with toast or rice with a little vegan mayonnaise!
