Ingredients

For the Salad:

  • 2 cups arugula
  • 2 cups baby kale
  • 1/2 cup pomegranate seeds
  • 1/2 cup chopped walnuts
  • 1 - 2 cup chopped beets
  • 1 cup cooked farro

For the Dressing:

  • 1/4 cup cashew butter
  • 1 teaspoon beet powder add more / less depending on your desired pigment
  • 1 squeeze of lemon juice
  • 2 - 4 tablespoons water add more / less depending on desired consistency
  • pinch sea salt & pepper

Preparation

  1. Arrange all salad ingredients in a bowl and serve with dressing.
  2. To make the dressing simply mix all ingredients together in a jar and adjust accordingly.
