Baby Corn and Peas Curry [Vegan]

This fragrant baby corn and peas masala is a simple dish that pairs perfectly with flatbread like rotis. The vegetables are cooked in a mixture of spices, including bay leaf, cloves, cinnamon, coriander, garam masala, and turmeric. It's also given a rich, underlying touch of creaminess from coconut cream.

Ingredients You Need for Baby Corn and Peas Curry [Vegan]

For the Curry:

  • 1 cup baby corn
  • 1/4 cup fresh peas
  • 1 small bay leaf
  • 2 cloves
  • 1 1-inch cinnamon stick
  • 1 teaspoon red chilli powder
  • 3/4 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon roasted cumin powder
  • Salt, to taste
  • 2 tablespoons oil
  • 1 tablespoon coconut cream

For the Masala:

  • 1 onion
  • 2 tomatoes, puréed
  • 2 green chilis
  • 12 cashews
  • 1-inch ginger piece
  • 5 cloves

How to Prepare Baby Corn and Peas Curry [Vegan]

  1. Add all ingredients for the masala into a mixer and grind into a fine paste. Use about 1 tablespoon water to make blending easier.
  2. Heat oil in a pan. Add bay leaf, cinnamon, cloves, and cumin seeds and cook for about 10 seconds.
  3. Add the ground masala paste. Cook until the raw smell of the paste is gone and it releases oil on the sides of the pan.
  4. Now add red chili powder, coriander powder, turmeric powder, salt, and garam masala powder. Mix well and cook for about 2-3 minutes.
  5. Add 1/4 cup water and bring it to a boil.
  6. Add chopped baby corn and peas, mix and cook until the vegetables are fully cooked.
  7. Finally, add about 1 tablespoon coconut cream, mix well, and turn off the flame.
  8. Garnish with fresh coriander leaves and serve hot with rotis or any flatbread.
