How to Prepare Baby Corn and Peas Curry [Vegan]
- Add all ingredients for the masala into a mixer and grind into a fine paste. Use about 1 tablespoon water to make blending easier.
- Heat oil in a pan. Add bay leaf, cinnamon, cloves, and cumin seeds and cook for about 10 seconds.
- Add the ground masala paste. Cook until the raw smell of the paste is gone and it releases oil on the sides of the pan.
- Now add red chili powder, coriander powder, turmeric powder, salt, and garam masala powder. Mix well and cook for about 2-3 minutes.
- Add 1/4 cup water and bring it to a boil.
- Add chopped baby corn and peas, mix and cook until the vegetables are fully cooked.
- Finally, add about 1 tablespoon coconut cream, mix well, and turn off the flame.
- Garnish with fresh coriander leaves and serve hot with rotis or any flatbread.
