Who doesn't love some good avocado toast? It's filling, can be dressed in all sorts of ways, and it's healthy! This particular recipe, adds a drizzle of creamy cashew cheese and a sprinkle of zesty hazelnut dukkah (a traditionally Egyptian mixture of nuts, herbs, and spices).

Ingredients

For the Toast:

  • 1 ripe avocado
  • 2 pieces of gluten-free toast

For the Cashew Cheese:

  • 1/2 cup cashews, soaked for 2 hours
  • 1 lemon
  • 1/4 cup water
  • A pinch of salt

For the Hazelnut Dukkah:

  • 1/2 cup hazelnuts
  • 1 teaspoon cumin
  • 1 teaspoon of coriander ground
  • 1/4 cup sesame seeds
  • A pinch of salt

Preparation

To Make the Cashew Cheese:

  1. Blend the cashews with the lemon, water, and salt until smooth.
  2. Transfer to a plastic zip lock bag

To Make the Hazelnut Dukkah:

  1. Lightly toast the sesame seeds until slightly golden
  2. In a food processor, lightly blend the sesame seeds, hazelnuts, spices, and salt until it's combined. Leave some pieces of hazelnuts still intact.
  3. Transfer to an airtight container.

To Assemble:

  1. Once the bread is toasted, spread with a thick layer of avocado.
  2. Get the cashew cheese and cut a small snip in the corner of the plastic bag. Lightly drizzle the cashew cheese over the avocado.
  3. Sprinkle with chili flakes and hazelnut dukkah and serve.
