Apricot Coconut Protein Bites [Vegan, Gluten-Free]
- 1/2 cup roasted almonds, unsalted
- 1/2 cup roasted cashews, unsalted
- 3/4 cup apricot, dried
- 1/4 cup shredded coconut, unsweetened
- 1 teaspoon coconut oil
- shredded coconut, for rolling
- Add all ingredients to a food processor. Process on high until ingredients are broken down and crumbly. Mixture should stick together when pressed.
- Roll dough into 1-2 tablespoon bites. Roll in additional shredded coconut, if desired.
