Ingredients

  • 1/2 cup roasted almonds, unsalted
  • 1/2 cup roasted cashews, unsalted
  • 3/4 cup apricot, dried
  • 1/4 cup shredded coconut, unsweetened
  • 1 teaspoon coconut oil
  • shredded coconut, for rolling

Preparation

  1. Add all ingredients to a food processor. Process on high until ingredients are broken down and crumbly. Mixture should stick together when pressed.
  2. Roll dough into 1-2 tablespoon bites. Roll in additional shredded coconut, if desired.
