There's no better way to celebrate the beginnings of fall than with an apple and cinnamon dessert! Apfelkuchen is a German apple cake similar in flavor to an apple pie. The layers of sliced apple are topped with an indulgent, crispy and crumbly coating.

Ingredients You Need for Apfelkuchen: German Apple Cake [Vegan, Gluten-Free]

For the Dough and Apples:

  • 1 1/4 gluten-free cake flour
  • 3 1/2 teaspoons baking powder
  • 1 pack vanilla sugar (see notes)
  • Zest of half a lemon
  • 1/2 cup and 2 tablespoons sugar
  • 1/2 cup and 1 tablespoon vegan butter
  • 1/2 cup and 2 tablespoons unsweetened applesauce
  • 28 ounces of fresh apples

For the Crumb Topping:

  • 3/4 cup gluten-free cake flour
  • 1/4 cup sugar
  • 3 1/2 tablespoons vegan butter
  • 1 teaspoon cinnamon

How to Prepare Apfelkuchen: German Apple Cake [Vegan, Gluten-Free]

  1. Wash, peel, and cut apples. Preheat the oven to 320°F.
  2. For the dough, mix flour with baking powder in a mixing bowl. Add the remaining ingredients and mix briefly at the lowest speed then at the highest for 2 minutes to form a smooth dough. Fill the dough into a spring form pan and smooth. Spread the apple pieces evenly on the dough.
  3.  For the crumb topping, add flour to a mixing bowl and mix with sugar, cinnamon, and butter. Mix everything with the mixer to the desired size. Spread the topping on the apples. Place the pan in the middle of the oven.
  4. Bake for 45 minutes at 320°F and then again 5 minutes at 390°F.

Notes

Vanilla sugar is a popular ingredient in German baking. If you can not find it, substitute powdered sugar.
