Ingredients You Need for Almond Butter Caramel Cookie Bars [Vegan, Gluten-Free]

For the Bottom Layer:

  • 2 cups almond meal/flour
  • 6 tablespoons pure maple syrup
  • 3 tablespoons coconut oil

For the Middle Layer:

  • 1 cup pitted Medjool dates (about 10-12 dates)
  • 2 tablespoons all natural almond butter
  • 1/4 cup water

How to Prepare Almond Butter Caramel Cookie Bars [Vegan, Gluten-Free]

  1. Line a small 8x8-inch baking pan with parchment paper and pre-heat the oven to 350°F.
  2. In a bowl, mix up the bottom layer ingredients and spread it evenly in the baking pan. It will be very sticky so pour the whole mixture in the pan and lightly wet your hands with water to evenly spread the bottom layer. Place in the oven and bake for 20 minutes.
  3. In a mini food processor, add all the ingredients for the center layer and blend until smooth, about 3 minutes.
  4. Once the baked bottom layer is done, let it cool completely (at least 30 minutes) then spread the center mixture evenly over the bottom layer and place it in the freezer for 30 minutes.
  5. After 30 minutes, melt the chocolate chips first and then remove the tray from the freezer.
  6. Then cut the squares down the center to create two large rectangle pieces. Spread the chocolate over the top and then, using a large knife, slice each square into eight slices by holding the knife completely vertical and wiping the knife between each cut.
  7. Then place each bar on a wax or parchment paper-lined baking sheet and place in the freezer for another 15 minutes until the chocolate is hardened.

Notes

Store in the freezer for up to 1 month or in the refrigerator for up to 1 week.
