Plant-based eating is not just a trend – it’s a movement that’s gaining momentum. Thanks to new research from the UNM Anderson School of Management, we have a clearer understanding of why more people are turning to fruits, vegetables, and grains, sidelining meat and dairy.

Lama Lteif’s ground-breaking research, titled “Plant Power: SEEDing our Future with Plant-based Eating,” offers a fresh perspective. She introduces the SEED framework: Sustainability, Ethics, Equity, and Dining for Health, as the driving values behind the increasing shift toward plant-based choices.

The SEED Insight:

  • Sustainability: With the alarming impacts of animal farming on climate change, it’s no wonder people are opting for plant-based alternatives. Cutting back on meat can notably decrease an individual’s carbon footprint, mitigating global warming effects.
  • Ethics: It’s not just about what’s on the plate. It’s about how it got there. Growing concerns regarding the treatment of animals in the meat and dairy industry make ethical consumption a priority for many. Supporting plant-based diets can be a stand against inhumane practices.
  • Equity: Everyone deserves access to nutritious food. The sad reality? Not everyone has access to fresh, plant-based options. Ensuring equal food access can lead to healthier communities and allow more people to make value-based dietary choices.
  • Dining for Health: Simply put, plants are packed with the good stuff. High in fiber, vitamins, and antioxidants, a plant-rich diet can help fend off diseases like cancer, diabetes, and heart ailments.

Lteif, with her dual expertise as a former nutritionist and a researcher, likens these values to a seed’s root system. Together, they intertwine and influence our food choices. If society embraces these values, we can envision a future that’s environmentally respectful, ethically sound, and health-focused.

Interestingly, the younger generation, especially Gen Z, is at the forefront of this movement.
