In an exclusive interview with Tasting Table, Chef Ming Tsai emphasizes the importance of using spices, sauces, and herbs to enhance the natural flavors of vegetables while avoiding excessive sodium. By doing so, plant-based dishes become more exciting and delicious. One of Chef Tsai’s tips is to use soy sauce instead of salt. This simple swap results in a deeper, sweeter flavor, allowing you to use less sodium. To further enhance the taste, Tsai suggests adding an acidic element, such as lemon, lime, or vinegar, which makes vegetables shine.
Another of Tsai’s go-to ingredients is a vegetarian oyster sauce made from dried mushrooms. This sauce adds a rich, umami flavor to stir-fries, reminiscent of classic Chinese dishes. You can create satisfying, flavorful meals by incorporating this sauce into your plant-based cooking.
Lastly, Chef Tsai recommends transforming pasta dishes by using abundant fresh herbs rather than relying on heavy cream or excessive cheese. He refers to herbs as “the other MSG,” noting that they add extra nutrition and balance the flavors of salty, starchy pasta and the fats used in cooking.
