This Curry Lime Trail Mix from Christine Wong’s cookbook, The Plantiful Plate, is a tasty and convenient snack that you’ll always want to have on hand. The awesome flavors will keep you coming back for more! Makes 10 to 12 servings.

  • 1 tablespoon coconut oil
  • 2 cups mixed nuts
  • 2 garlic cloves, minced
  • 1 tablespoon pure maple syrup
  • 2 teaspoons curry powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • Squeeze of fresh lime juice


  1. In a cast- iron skillet over medium-high heat, warm the coconut oil. Reduce the heat to medium and add the nuts, tossing until well coated. Continue toasting the nuts for 5 to 7 minutes, stirring frequently to ensure even toasting and to prevent burning.
  2. Stir in the remaining ingredients until well combined and continue to toast for 1 more minute. Remove from the heat and transfer to a cooling rack lined with parchment paper to cool. There’s nothing more comfortingly addictive than freshly roasted nuts, but if you have any left, set aside to cool completely before storing in an airtight container.
