Swiss chef Daniel Humm, known for his innovative plant-based cuisine, has been appointed a UNESCO Goodwill Ambassador for Food Education. The ceremony took place at his famous three-Michelin-star restaurant, Eleven Madison Park, in New York. Humm’s appointment highlights his commitment to sustainable food practices and the critical role of nutrition in shaping a better future.
UNESCO Director-General Audrey Azoulay praised Humm not only for his culinary talent but also for his passion for sustainable food systems. She emphasized the power of food to drive environmental change and foster education. Humm’s new role aligns with UNESCO’s mission to safeguard cultural heritage, promote health, and protect biodiversity in the face of climate challenges. As a Goodwill Ambassador, Humm will represent UNESCO at key international events, including the COP for Biodiversity. He will also organize initiatives such as a plant-based dinner with fellow chef Mauro Colagreco and contribute to the development of UNESCO’s International Food Atlas, which will preserve and celebrate culinary traditions around the world.
Humm’s career has been marked by a strong focus on sustainability. After founding the nonprofit Rethink Food, he shifted his focus toward creating a more equitable food system. In 2021, he made waves by transitioning Eleven Madison Park to a fully plant-based menu, maintaining its Michelin-star status, and furthering his commitment to the environment.
