Ingredients You Need for Avocado and Grilled Zucchini Salad [Vegan]

For the Salad: 

  • 1/2 bag of arugula
  • 2 zucchini
  • 1 avocado (ripe and ready to eat)
  • 6-8 sundried tomatoes
  • .7 ounces pine nuts
  • Pinch of chili flakes
  • Salt and pepper

For the Salad Dressing:

  • 1.75 ounces dairy-free yogurt (unsweetened)
  • 1 lemon (grated and squeezed)
  • 1 teaspoon sesame oil
  • 1 tablespoon garlic puree (or finely chopped and crushed garlic)
  • Salt and pepper to taste

How to Prepare Avocado and Grilled Zucchini Salad [Vegan]

  1. Prepare your oven and turn on the grill to a high temperature (we used around 392°F.
  2. Thinly slice the courgette long ways so that you are left with thin long strips. Season the courgette with salt, pepper, and a drizzle of oil.
  3. Place the courgette under the grill. We grilled ours for 10 minutes.
  4. In the meantime, but making sure to keep an eye on the courgettes, you can prepare the dressing. In a small bowl, get all your ingredients and mix them.
  5. Take your courgette out of the oven.
  6. Thinly slice your avocado (we cut ours around 1cm thick).
  7. Put the leaves in the bowl, add all the remaining ingredients. Drizzle the dressing on top or have it in the dipping bowl at the side.
