A heartbreaking case from New Jersey has revealed the first known death tied to alpha gal syndrome, a rare meat allergy that can develop after a Lone Star tick bite. According to CBS News, researchers connected the 2024 death of a forty seven year old camper to a delayed anaphylactic reaction triggered by eating beef. The condition happens when a tick exposes a person to alpha galactose, a carbohydrate found in red meat and dairy. The CDC notes that symptoms can include stomach pain, nausea, rashes and serious breathing issues hours after eating animal products.
The man first fell ill after eating steak during a summer camping trip, experiencing intense abdominal pain that resolved by morning. Two weeks later he ate a hamburger at a gathering and was later found unconscious. A postmortem test eventually revealed a severe allergic reaction to alpha gal that matched fatal anaphylaxis. His family reported that earlier in the summer he had dozens of bites around his ankles that were likely from Lone Star tick larvae.
Experts say this is the first confirmed fatal case in which symptoms appeared hours after eating mammalian meat. Physicians at UVA Health want people to understand that abdominal discomfort can also signal an allergic reaction, especially in regions where Lone Star ticks are spreading due to warmer seasons and shifting climate patterns. Doctors emphasize that although this outcome is extremely rare, growing tick populations raise new risks for public health and the environment.
