For diet and health, I need to stay away from processed flour eg. bread, pizza. pancakes, etc., I like oatmeal porridge but need an alternative for two or three days a week. This is it.
To turn this millet into a flour that can be cooked I use a pestle and mortar to grind. It takes about 2-5 minutes for about 3-5 tablespoons of millet at a time. For me alone, I grind about 5-7 tablespoons. To prepare the porridge I mix the flour into about 1.5 cups of water. I bring another 1.5 or 2 cups of water to a boil and add my mixture. It takes about 10 to 15 minutes to boil down to a thick porridge. I add about a tablespoon of oat milk and a teaspoon or so of sugar and butter and enjoy!
Keeps me feeling full and healthy for at least 4 hours.”
