Calls for Plant-Based Meals to Become the Norm in UK Hospitals

Food expert Tim Spector is urging the NHS to make plant-based meals the standard option in hospitals across the UK. He, along with over 1,000 healthcare professionals, has signed an open letter calling for “plant-based by default” menus, citing benefits like improved patient satisfaction, reduced food costs, and lower carbon emissions.

The push for plant-based options follows a successful trial in New York, which reported a 36% reduction in food-related carbon emissions and high patient approval. The letter suggests that offering plant-based meals could save the NHS £74 million annually and cut greenhouse gas emissions by up to 50%.

While meat and dairy wouldn’t be entirely removed from menus, the goal is to prioritize plant-based foods. Backers of the initiative include TV nature presenter Chris Packham and environmental writer George Monbiot. According to Shireen Kassam, co-lead of the campaign, when healthcare staff and patients understand the health and climate benefits, they tend to Support the switch.
