A groundbreaking study from the University of Birmingham confirms air fryers as the least polluting cooking method, emitting significantly lower indoor air pollutants than traditional techniques like pan frying and deep frying. Indoor air pollution is linked to chronic health issues such as respiratory and cardiovascular diseases, and these findings highlight the benefits of air fryers not only for energy efficiency but also for reducing environmental impact.

The research, published in Indoor Air, investigated five cooking methods—pan-frying, stir-frying, deep-fat frying, boiling, and air frying—in a controlled research kitchen. Scientists measured levels of particulate matter (PM) and volatile organic compounds (VOCs), two major pollutants contributing to indoor air quality concerns.

Key findings include:

  • Particulate Matter (PM): Air frying produced the lowest PM concentration at 0.6 micrograms per cubic meter (µg/m³), while pan frying peaked at 92.9 µg/m³.
  • Volatile Organic Compounds (VOCs): Air frying also emitted the fewest VOCs at 20 parts per billion (ppb), in contrast to pan frying’s 260 ppb.

The study emphasizes that Pollution persists long after cooking concludes. Researchers observed elevated pollutant levels in the kitchen for over an hour post-cooking, despite the process lasting only 10 minutes.

To combat indoor Pollution, lead researcher Professor Christian Pfrang recommends improving ventilation by opening windows or using extractor fans during and after cooking. These measures can help disperse lingering particles and VOCs, minimizing personal exposure.
