For the Pudding Cakes:
  • 1 cup soaked dates
  • 1 cup soaking water
  • 2 teaspoons vanilla
  • 5 tablespoons aquafaba
  • 2 tablespoons apple cider vinegar
  • A pinch of salt
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 cup buckwheat flour
  • 1/2 cup brown rice flour
For the Sauce:
  • 3/4 cup dates
  • 3/4 cup soaking water
  • 1/8 cup water
  • 1/8 cup soy milk
  • A pinch of salt
  • 1 tablespoon tahini

How to Prepare Sticky Date Pudding Cakes [Vegan, Gluten-Free]

  1. Preheat oven to 356°F and grease a muffin pan.
  2. Blend dates, soaking water, vanilla, and aquafaba until smooth.
  3. Pour into a bowl with premixed dry ingredients and mix until just combined.
  4. Scoop into six muffin cups and bake for 25-30 minutes.
  5. Meanwhile, in a blender or food processor, blend the sauce ingredients until smooth, scraping down the sides as necessary.
  6. Let the pudding cakes cool for a few minutes then gently remove each with a large spoon.
  7. Poke holes into the pudding cakes, pour the sauce over and serve warm.
