Ingredients You Need for Kritharaki Salad with Dried Prunes [Vegan]

  • 1 cup of Kritharaki
  • 4 tablespoons olive oil
  • 1 1/2 glasses of water plus more, as needed
  • Fresh parsley finely chopped
  • Fresh dill finely chopped
  • 1 pepper, red cut into fine cubes
  • 2 tomatoes cut into small cubes
  • 1 handful of walnuts chopped
  • A few dried (soft) prunes cut into bite-sized pieces
  • Some lemon juice
  • 1 to 2 tablespoons olive oil
  • Vegetable broth

How to Prepare Kritharaki Salad with Dried Prunes [Vegan]

  1. Fry the Kritharaki with the oil in a saucepan, stirring constantly over medium heat for a few minutes until light golden brown.
  2. Add the water and some salt and cook at a low temperature similar to rice. Only add as much water as necessary. Make sure that the Kritharaki does not burn, but avoid stirring it too much (rather take the pot off the stove and swing it back and forth). Set the Kritharaki aside and let it cool slightly.
  3. Add the parsley, dill, peppers, tomatoes, walnuts and prunes to the Kritharaki. Season with lemon juice, olive oil, and some vegetable broth.
