Ingredients You Need for Easy Almond Butter Brownies [Vegan]

  • 2 tablespoons flax meal
  • 6 tablespoons water
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond butter
  • 3/4 light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup Dutch-process cocoa powder
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/3 cup chopped pecans
  • Coconut whipped cream and melted chocolate, if desired

How to Prepare Easy Almond Butter Brownies [Vegan]

  1. Preheat the oven to 350°F.
  2. Prepare the flax seed egg by combining the flax meal and water in small bowl and set aside.
  3. In a large bowl, add the coconut oil, almond butter, sugar, and vanilla and mix well.
  4. Add cocoa powder, flour, baking powder, and salt.
  5. Mix in the pecans.
  6. Pour the batter into a 5x7-inch cake mold that is lightly coated with oil.
  7. Bake for about 22-25 minutes. Keep an eye on the brownies during baking and do the toothpick test – toothpick inserted in the middle of the cake should come out clean – to judge when it is done.
  8. Slice when the brownies are at room temperature.
  9. Optionally, top the brownies with melted dark chocolate and whipped coconut cream.

Notes

Finish with coconut whipped cream and melted chocolate if you want.
